Another new place to eat

Darrin and Tina London will break new Tacoma ground with the opening of ameRAWcan Bistro. Pronounced "American," the bistro's organic raw foods-focused menu will be found on an iPad at each table. Darrin says to expect "a more upscale dining experience," and asks potential customers to be open-minded. "It's not the typical health food, organic, blah place," he says.

Raw cuisine is more than carrot sticks and salad. The bistro will offer made-to-order soups, vegetarian and omnivore dishes using Essential Baking Company breads, Applegate Farms and Boar's Head organic meats, various cheeses and local sustainable produce. To prevent cross contamination, animal products and vegetarian items will be kept separate in storage and prep areas.

"We like to eat out a lot. Getting stuff that's quick and good for you is hard," says Darrin. In order to offer something Tacoma does not have, he quickly snatched up Chef Francisco "Paco" Hernandez, who just moved to the area. Chef Hernandez attended Portland Culinary School and has cooked at vegan restaurants in Portland. Specializing in low glycemic index desserts, Darrin adds "Chocolate goji berry cheesecake has no dairy. Chocolate cream pie? You'll never believe there isn't real cream in it."

Valhalla Roasters espresso and coffee, herbal teas and stevia-sweetened dry sodas will be served. Alcohol will not. Pending final inspection, London anticipates opening to the public the week of Aug. 8.
