Squeezing it

Checking in with Smooth and Juicey - a juice bar 253 style

THANE DAVIS: He's squeezed a lot of juice.

Smoked salmon on a bed of mixed greens with walnuts, grapes and tomatoes. Healthy combo meals of a salad and a smoothie. Organic soups in the fall, panini made before your eyes and outdoor seating.

These are just a few of the carrots dangled before our very eyes down at Smooth and Juicey, Tacoma's unique juice bar and health-food hangout.

Housed in the big purple building next to the YMCA on Market Street, Smooth and Juicey is the brainchild of Thane Davis and wife Patricia Lecy-Davis. The duo tells me that, along with their partners, they have made the  decision to expand the juice-bar business to other foods (specifics and date of availability are yet to be determined).

I dropped in last Tuesday afternoon for a chat with Davis. He chuckles, "I said I'd live in a building downtown 20 years ago. We've been here for a few now. Things take time to evolve and I'm letting them."

His casually cautious approach to growth is good form in the face of an economy with as many sides as Sybil - if you jump too soon there may not be anywhere to land. He shares that his wife and his business partner have given him hard deadlines for adding outdoor seating to the front of the building, extending business hours and expanding their menu.

Davis's Cheshire cat grin makes me wonder what other tricks he's got up his sleeve.

"I've got plans to move the front doors to the side and add a fruit stand with seating over there, too," he tells me. But don't starting jumping up and down yet: Davis expects the fruit stand will become a reality in 2012. He also hopes to make Smooth and Juicey a downtown CSA pick-up location. Currently the closest CSA pick-up location is on Sixth Avenue near the Narrows Bridge. "I try to live as healthy as I can and that's easier to do when things are convenient," he says. Speaking of convenience, Davis says plans are also in the works to offer lunch items to downtown businesses during the week.

ADDED BONUS: Smooth and Juicey has a new neighbor across the way: Market Street Coffee moved into the space vacated by Satellite Coffee and has been celebrating a soft opening all week.
