There has been plenty of speculation about when Massimo Italian Bar and Grill will open in University Place. You know, Massimo Italian Bar and Grill ... that place that used to be Captain Nemo's. Recently, I dropped by the restaurant - still in full remodel mode - and chatted with Massimo Operating Partner Rich Johnson.

Johnson shares that requirements from the City of University Place and the Pierce County Health Department have delayed Massimo's opening, originally slated for the middle of June. He's as excited and anxious as anyone to "get the doors open and let people start enjoying the new place and the food."

As Johnson and I chat he shows me around the building, pointing out much-needed updates to the appearance. Carpet has been removed, and the cement floor underneath stained in warm earth tones. The lighting consists of artsy pendant lights, can lighting and wall sconces. The brickwork on the fireplace in the entry has been resurfaced, giving it a more modern feel. The long buddy bar and terraced seating in the lounge will optimize the massive HD viewing screens with full sound system. A fresh coat of paint on the entire interior provides a clean feel. I almost forgot it ever was Captain Nemo's.

The menu, one of accessible, family-friendly Italian fare, will generally mirror the Massimo on the Purdy Spit, says Johnson. Health conscious dishes, the availability of gluten-free pasta and a menu that tops out at $10 for lunch and $20 for dinner seriously heightens anticipation.

To answer the pressing question at hand, Johnson sighs, smiling, "We hope to open the first week of July."
