Seahawks Football: Watch today's championship game in a brewery drinking newly released beer ...

The Seattle Seahawks thoroughly beat the Green Bay Packers 36-16 on the opening night of the NFL season - but a lot has changed since Sept. 4. Packers quarterback Aaron Rodgers took a chill pill and is the favorite to win League MVP. Looking to become the first team since New England from the 2003 and '04 seasons to reach consecutive Super Bowls, the Seahawks have won seven straight and 10 of 11, and has reason to feel cautiously optimistic about the next step. The NFC's final game of the 2014-2015 season looks to be a better game than its first. The NFC championship game kicks off at 12:05 p.m. at CenturyLink Field, broadcasted on FOX.

Sure, you love Seahawks football, but you also love South Sound craft beer. You often order something you've never tasted, just to see what it's like. You might have gotten into the habit of filling a growler at a brewery every weekend, or stopping by the neighborhood bottle shop two or three times during the week. But, have you watched the Seahawks in a championship game in a brewery drinking a newly released beer?

Pacific Brewing & Malting Co.

Potomac Oatmeal Stout

ABV: 5.9%, IBU: 43

Pacific Brewing & Malting Co. might have opened in downtown Tacoma Sept. 20, 2014, but yesterday they released their first stout. Paying tribute to the Tacoma's original taproom, Potomac Sample Room - which was located at the original Pacific Brewing & Malting Co. on Jefferson Street over 100 years ago - the almost black Potomac Oatmeal Stout could be called a boozy candy bar. Not that this stout is sweet. It's not; it's just the flavors sweeping across my tongue could just as easily describe haute chocolat - creamy, chewy, chocolate and rich like cocoa powder stirred into ice cream. It's silky smooth, and easy to drink.

SEAHAWKS VIEWING: Their family-friendly taproom has plenty of communal seating and standing room to watch the game on the sole big screen. There's no food service, but outside food is allowed, and Sammy's Pizza will deliver. Top Rung Brewing

Lacey Dark Lager

ABV: 5.8%, IBU: 27

Yesterday, standing shoulder-to-shoulder at Wingman Brewers' Porterpalooza, one of my shoulders was pressing against Top Rung Brewing's co-owner Casey Sobol and the other shoulder against Top Rung's salesman Mike Besser (BrewDad). "Aren't you releasing a new beer today?" I asked the gents. "Yes, our Lacey Dark Lager, but it's Porterpalooza. What are you going to do?" replied Sobol. They were actually dropping off kegs, so we raced back to their Lacey brewery for a sip of the new dark beauty. The Lacey Dark Lager, a tribute to their hometown, is Top Rung's ninth beer since Sobol and head brewer Jason Stoltz opened the larger brewery and taproom in April 2014. The session able dark lager goes down easy, with Pilsner, Munich, Black Prinz and Midnight Wheat for the grain bill and Sterling hops. It's crisp and refreshing, yet dark and malty.

SEAHAWKS VIEWING: A giant television screen hangs before a sea of bench tables, high-tops, couches and bar stools. Three Magnets Brewing Co.

Karakterbier Brett Saison

ABV: 6.2%, IBU: 40

Evergreen State College alumni Nathan and Sara Reilly, who have been running Darby's Cafe for the past nine years, opened Three Magnets Brewing Co. in downtown Olympia this past November. They hit the lottery when they hired head brewer and "Local Sourcing Liaison" Pat Jansen, who also hit the lottery with assistant brewer Jeff Stokes, who also runs the Three Magnets bar. Together, they brew a wide range of craft beers, but it's their Funkatorium section of their beer menu that draws beer enthusiasts like a magnet. By Funkatorium, I mean their sours, farmhouse ales and white ales, especially when they play with Brettanomyces (a.k.a. Brett) - a slow-growing wild yeast that when added to beer can give it a funky barnyard taste. Earlier this week the Brett was back when they released their Karakterbier Brett Saison, a Brett finished hoppy farmhouse ale made with German Pilsner and Vienna malts for a "peppery, floral, fruity, spicy nose that carries over onto the tongue with flavors of crackers, bread, pineapple, and a light farmhouse funk finishing with a dry and refreshing bitterness," as stated on their Facebook. The description nails it; and pairs well with their Two Mini Burgers ($7.50) off their happy hour menu.

SEAHAWKS VIEWING: Months before their Three Magnet's opening, the Reillys squeezed a ginormous big screen television in their living room. Seahawks football, as well as soccer, is important to them, and the huge screen was purchased when the brewery was just studs and nails. During Seahawks games, the Three Magnet's happy hour menu is on, which means $1 off pints 50 cents off snifters and delicious, gourmet appetizers range from #4-$7.50, including the 3.5-ounce Painted Hills all natural house ground chuck Two Mini Burgers(!). 7 Seas Brewing

Belgian Blonde, Tap Room Reserve
ABV: 6.2%, IBU: 15

This week, Gig Harbor's 7 Seas Brewing released its Belgian Blonde, a spicy medium-bodied beauty specifically for its taproom. An authentic Belgian Trappist yeast strain provides a delicate Belgian character; European Pilsner, Aromatic, and a touch of domestic Pale ale malts deliver a grainy, slightly up-front malt sweetness; while Golding hops - consisting of a group of traditional English aroma varieties which have been cultivated since 1790 - accent the distinctly spicy, peppery and fruity yeast driven phenolic character of this medium-bodied, slightly creamy blonde ale. The clean, refreshing brew is poundable yet flavorful.

SEAHAWKS VIEWING: Streaming NFL games is not restricted to sneak peaks during church. The Gig Harbor brewery might not house televisions, but 7 Seas bartender Max says many folks nestle up to the taproom's long tables and stream the games on their computers. Words & Photos: Annual 7 Seas Beer Dinner at Brix 25

First, let's dispel the likely initial reaction upon hearing "beer dinner." No, this is not some bacchanalian kegger where the winner is he who drinks the most. Instead, each course includes 10-ounce pours of beer, which is supposed to be sipped and savored, not chugged. Though, full-disclosure, Brix 25's annual 7 Seas Beer Dinner pre-dinner reception offered a chance to sip cocktails, which many participants did, and the dessert course arrived with two beers riding shotgun. So, that's all good news.

For the last four years, the Gig Harbor fine-dining restaurant has offered a fabulous way to wind down after Thanksgiving and celebrate small business, sailing through Black Friday with a beer pairing dinner with neighbors 7 Seas Brewing. Chef/owner Thad Lyman welcome the crowd of 7 Seas beer dinner regulars and new faces, announcing new flavors will be enjoyed, concentrating on "Southern Low County" flavors, Southern culture on the skids with Northwest twists.

"Keg Commander" Colin Harvin, who concentrates on sales and marketing for 7 Seas, represented the brewery, substituting for co-owner Mike Runion who had his hands full with a newborn girl. Commander Harvin ran through the history of the night's first beer, the 253 Pilsner, how it was the brainchild of Runion and 253 Heart Foundation owner/Shake Shake Shake co-owner Steve Naccarato, the fact that proceeds benefit local charities and how the Northwest pilsner is crisp and clean. He explained co-owner and head brewer Travis Guterson incorporated Sterling and Cascade hops from the Yakima Valley, barley from Washington state and the golden cans are produced in Olympia. The 253 Pilsner was paired with breakfast, bacon and eggs on flat bread.

"Beer isn't just for breakfast; breakfast can be for dinner just as well," said Lyman.

Lyman used malts from the beer to create the béchamel, bacon lardons underneath the sunny side egg with a little Blanc Rose. Lyman suggested picking up the rich starter like a taco and let it drip away, which most did. The bacon and egg looked to dominate, but the refreshing, crisp pilsner found a perfect balance. Off to a good start!

The second course: fried oysters and grits turned out to be incredibly delicious, especially when paired with 7 Seas' Reign Man ESB - the toasty malt character with a slight caramel sweetness brought out the rich, creamy polenta. The Reign Man ESB rarely makes an appearance outside of the 7 Seas' taproom. The Northwest-style Extra Special Bitter features citrusy Yakima Valley Centennial hops and malt heavy, and was brewed in honor of the Seattle Space Needle's 50th anniversary. The Fat Bastard oysters from Taylor Shellfish Farms, which were in the water the previous morning, were prepared with a little okra, fried quick with cornmeal and placed on creamy polenta with a little bit of clams.

Up next, the main course - I think the best part of the night - was a short stack of Johnny Cakes with pulled pork paired with the Chili Pepper Imperial Stout. The beer basically made its South Sound premier at the dinner. Harvin introduced the nine percent stout treated with three different kinds of chili peppers - including ghost peppers - which were added during the second fermentation, letting the oils seep out. The beer starts off with a nice, silky chocolate, espresso roast flavor with the peppers hitting the back of the throat, cutting through the bitterness at the end, bringing back the chocolate notes. I could be my favorite 7 Seas beer.

Lyman slow-roasted the pork for hours, then removed the meat from the smoker and braised it with the Chili Pepper Imperial Stout, picking up the chilies and malted barleys. The pork was placed on high cornmeal cakes, with green Tabasco sauce, goat cheese drizzle and Jack Daniels maple syrup.

The crowd erupted in chatter after Lyman described the dish. "I mention Jack Daniels and the crowd stops listening," Lyman said with a laugh.

Runion made an appearance during the main course, to thank everyone and show baby pictures.

Finally, a delicious, rich dessert was brought out to finish the evening. Mississippi Mud Pie with caramel pecans, paired with 7 Seas' Port Royal Stout AND a return appearance by the 253 Pilsner for a "deconstructed" black and tan, as Harvin put it. The traditional English-style stout offered more flavors of dark chocolate, espresso and malt sweetness. Nugget and Mt. Hood hops gave it a nice, clean finish.

"As a little boy, I made mud pies, but as most of the men in this room would agree, it tasted like crap," said Lyman. "This mud pie has a dark chocolate ganache bottom with chocolate pudding on top and a malted meringue on the finish, toasted it off, decorated with rolled oats that went into the stout, toasted pecans and a caramel made with really heavy black sea salt to give it a little pop."

The dinner proved to be an enjoyable way to sip two 7 Seas Beers I haven't tried, and gain an appreciation for the ways in which various flavors combine and work together in nontraditional Southern dishes. Bravo!

99 Bottles will unleash a massive beet tasting with Skyler Cesarone of Lagunitas Brewing Company of Petaluma, California. Cesarone will pour nearly every beer from Lagunitas, from 5-7 p.m. The tasting fee is $2.

Epic Brewing Company, a Salt Lake City brewery founded in 2008, will pay a visit to the Puyallup River Alehouse from 6-9 p.m. No word is the Epic Big Bad Baptist Imperial Stout, aka the Beast, will be making an appearance. Know this the pitch-black beer rings in at 11.8 percent ABV.

October has the German celebration of beer. November has the American feast to end all feasts. If only there was a way to merge the two months into one long, gluttonous season. Octember might be a figment of my imagination, but Novem-Beer isn't. Drink up South Sound. ...

WEDNESDAY, NOV. 19

Lane County, Oregon, is in a yeasty beer boom. Whiteaker, Oakshire, Ninkasi, Plank Town, Viking Braggot, Claim 52, Falling Sky and Hop Valley Brewing Co. are just a few of the breweries keeping Eugene and Springfield on a constant beer run. Pint Defiance Specialty Beers & Taproom picked Hop Valley from the notable beer region for a night of beers and prizes from 5-7 p.m. Eugene native and brewmaster Trevor Howard opened Hop Valley Brewing Friday, Feb. 13, 2009. Indeed, he and his father, Ron Howard, Jonas Kungys and Chuck Hare chose Friday the 13th. Good luck has only come their way, as Hop Valley has undergone incredible growth. The growth should continue as Hop Valley hired Rob Brunsman, the funniest man in beer, to rep Washington state. Join Brunsman for such Hop Valley brews as Alphadelic IPA, Double-D Blonde, Mistress of the Dark Black IPA and Smokin' Porter.

Japan's Kiuchi Brewery was established in 1823 as a sake brewery. In 1996, they began brewing beer under the Hitachino Nest label, and have since produced a range of well-regarded, tasty beers. Their White Ale, a wheat beer spiced with coriander and curacao orange peel in the Belgian style, is top notch, and certainly on par with the best Belgian representatives of this classic style. The Red Hot offers a flight of four Hitachino beers today.

Iron Horse Brewery - the Ellensburg, Washington, brewery that loves to party - will bring a bunch of beer and schwag to The Swiss from 6-9 p.m.

Puyallup River Alehouse hosts North Coast Brewing Company out of Fort Bragg, California, for a night of Blue Star Wheat Beer, Old Rasputin Russian Imperial Stout, Acme California IPA and other brews, plus schwag giveaways from 6-9 p.m.

McMenamins Spar Café celebrates the Terminator Stout's 29th birthday with $3 pints all day. Expect Terminator floats and chili dogs, too.

THURSDAY, NOV. 20

Over by Pacific Lutheran University, beer geek Erick Swenson will offer a German beer sampler at 208 Garfield for $6 a person, beginning at 6 p.m. 

Top Rung Brewing will run its Trashed Pumpkin through a Randall loaded with coffee beans.

The Copper Door hosts a Movember fundraiser beginning at 6 p.m. For every pint sold, a dollar will be earmarked for The Movember Foundation to fight prostate cancer, testicular cancer and mental health issues. Expect a raffle with Movember schwag.

Wingman Brewers knows you need a malty, roasty, chocolatey barrel-aged hug - the warmest snuggle-buddy in all the land - during these cold times. In celebration of their Stratofortress and Bourbon Barrel Stratofortress Belgian Strong Dark Ale style beer releases, Wingman has created a mini festival of darkness and deliverance. In addition to Team Stratofortress, and hauling out its other dark beer goodness, Wingman has invited a few fellow winter beers - some equally dark and strong as the Stratofortresses. Even the prospect of guests to impress doesn't tempt me to start cooking, since I'm acutely aware of how many more talented epicureans are practicing their art in the South Sound, including Bar Bistro's executive Chef Jason Blessum. Veterans Day discounts or free meals to servicemembers and veterans

Many restaurants and retailers are offering Veterans Day discounts or free meals to servicemembers and veterans. Some offers even extend to family members.

National Parks and Army Corps of Engineers recreation areas are waiving entrance fees for veterans, servicemembers and their families Nov. 11.

Most commercial establishments require proof of military service such as a military ID card or current leave and earnings statement, a driver's license with veteran's designation, DD 214 discharge paperwork, a veteran's organization card or a photograph in uniform.

Many of the companies offering deals are franchises, and officials recommend calling ahead to verify participation of specific locations, along with dates and times of the offers.

The following list was primarily compiled by military community services staff members and does not claim to be all-inclusive:

Salty's at Redondo: The seafood restaurant in Des Moines offers a free slice of Salty's famous white chocolate mousse cake and a take home $20 gift card to those who have served in the U.S. armed forces.

Harmon Tap Room: The brewery in Tacoma's Stadium District honors those who served with a 25 percent discount off their meals today, with military ID.

Duke's Chowder House: The seafood restaurant will give away its ward-winning chowder to all veterans today, which happens to be International Chowder Day.

Lunchbox Laboratory: The gourmet burger chain offers a free meal up to $15 to all veterans.

Vince's Italian Restaurant & Pizzeria: The Federal Way Italian joint offers a 20 percent discount to all veterans and active-duty veterans.

BJ's Restaurant: Free lunch entree or free one-topping mini pizza at dinner is being offered.

Famous Dave's: Participating locations are offering different meal deals for current or retired military on Veterans Day.

Hooters: A free meal of 10 hot wings available to military veterans and service members all day on Veterans Day at participating Hooters restaurants. A drink purchase is required.

Krispy Kreme: A free doughnut and small coffee available only at participating Krispy Kreme stores. Offer available to all active-duty, retirees & veterans on Nov. 11.

Red Robin: Free Red's Tavern Double and Bottomless Steak Fries for all Red Robin guests with a military ID or proof of service. Red Robin is also partnering with Heinz for Veterans Day to benefit the Wounded Warrior Project. Red Robin will also donate $10,000 to the Wounded Warrior Project.

Little Caesars Pizza: U.S. military and vets get a free order of Crazy Bread, with proof of military status/service. Call local Little Caesars to make sure they are participating in this deal.

7-Eleven: Veterans, active members of the U.S. military and their immediate families can stop by 7-Eleven on Veterans Day and get a free small Slurpee drink. Just bring proof of current or former U.S. military service to participating stores.

Applebee Restaurants: A free meal will be provided to all active or retired service members and veterans. Proof of service is required. Locations can be checked at www.applebees.com.

Bed Bath & Beyond: Service members can receive 20 percent off their entire purchase Nov 9, 10 and 11, in-store only. U.S. military ID required at time of purchase.

Big Lots: A discount of 10 percent on entire purchase is being offered to active-duty military, Guard/Reserve, veterans, retirees and their immediate family members, with a valid ID.

Cabela's: The store's standard employee discount is offered to all U.S. military veterans, active-duty military, Guard/Reserve, law enforcement, fire and emergency medical services personnel. Discounts varies from 5 percent to 20 percent, depending on the item.

Chilis: Free entree available to veterans and active- duty military from 11 a.m. -5 p.m. on Veterans Day.

Cost Plus World Market: A discount of 20 percent off entire in-store purchase available to U.S. military. ID required at time of purchase.

Denny's: Get free all-you-can-eat pancakes at participating Denny's restaurants.

JC Penny: Veterans, active-duty military and family members can receive an extra 20 percent off in stores Nov. 6-11 with coupon.

Lowe's Military Discount: Lowe's Companies, Inc. will offer all active, reserve, honorably discharged, retired military personnel and their immediate family members a 10-percent discount on in-store U.S. purchases made during the Veterans Day holiday. The discount is available on in-stock and special order purchases up to $5,000. To qualify, individuals must present a valid military ID or other proof of service. Excluded from the discount are sales via Lowes.com, previous sales, and purchases of services or gift cards.

McCormick & Schmick's: Complimentary lunch or dinner is offered at participating restaurants to veterans. Verification of service is required (retired ID card or DD214). McCormick & Schmick's highly encourages reservations for the Veterans Appreciation Event as tables fill up quickly for this event each year.

Massage Envy: Participating locations in the Washington, D.C, Maryland, and northern Virginia region are offering a complimentary one-hour massage to active military, veterans and spouses on Nov. 11.

Menchie's Free Frozen Yogurt: On Veterans Day, veterans and active-duty personnel get a free 6 oz. frozen yogurt. Show a valid ID or be in uniform to receive.

National Parks: Fee-free days offered to all visitors at more than 100 national parks that usually charge entrance fees. And making the fun even more affordable, many national park concessioners are joining the National Park Service in welcoming visitors with their own special offers.

Olive Garden: Veterans and active -duty military get a free meal on Veterans Day. With proof of service, choose from a special menu with breadsticks and a choice of soup or salad.

Outback Steakhouse: As an expression of Outback Steakhouse's appreciation to s veterans and active-duty military, a free Bloomin' Onion and Coca Cola will be available to them at every Outback in the country.

Red Lobster: Free appetizer available on Veterans Day with military ID or proof of service. Vets may choose from a select list of appetizers.

Sizzler: Veterans and military can show proof of service to get a free 6-oz steak entree with the purchase of a second one.

Sports Authority: All Veterans and military personnel can stop at their local Sports Authority store to receive 15 percent off their entire purchase.

T.G.I. Friday's: Free Lunch offered for all U.S. military and veterans. Uniforms should be worn, if permitted by the service, or military ID (old or current) can be shown.

Peterson brothers and 7 Seas Brewing collaborate on The Galley food truck

Inspiration can take many forms, not the least common of which are pints of beer and a lazy Friday evening. Of course, the problem with these alcohol-induced epiphanies is that they're usually either, one, really stupid ideas, or two, quickly forgotten in favor of pizza and the sofa. There is the rare exception, however, and that is where our story begins.

It was June of 2014, and two men wearing life jackets stood above left field. While best friends wrestled over foul balls, groins were scratched and a giant fuzzy big-eyed reindeer punk'd grandmothers, these two life jacket-wearing guys, drinking IPAs, had a moment - an authentic human connection producing a deep stare, an "a-ha" moment, followed by juicy, unfiltered spiritual nourishing rush to the head.

They took another sip of 7 Seas Brewing Life Jacket Session IPA.

Then paused.

The two businessmen knew some ideas float while others sink like lead to the bottom.

They stared at each other's life jackets.

Sometimes you just have to allow that something grand and good might actually be born while wearing a life jacket ... while drinking beer ... beer named after a life jacket.

And sometimes that something ends up being a food truck.

That fateful night at Cheney Stadium, during 7 Seas Brewing's Life Jacket Session IPA release party, the brewery's co-owner Mike Runion and Tacoma restaurant and bar Peterson Bros. 1111 co-owner Justin Peterson considered partnering on a food truck.

"A week later Mike called me and asked if I was serious," says Peterson. "I said, ‘hell yes!'"

"We sat down and decided in one day that it was a great idea," explains Runion. "We drove up to Seattle because we knew a guy who was selling a food truck but the previous buyer backed out. We bought it that day. It happened that fast."

Then, the waiting game began. The permits needed to be acquired. Runion and Peterson also had huge projects of their own in the final stages. Runion and 7 Seas forged a partnership with 253 Heart owner Steve Naccarato to produce the 253 Pilsner coupled with a benefitting nonprofit program. The beer cans needed to be designed and distribution nailed down. Peterson, with his business partner and twin brother, Robby, forged a partnership with Tacoma's X Group Restaurants to remodel Red's Valley Pub down the street from the Tacoma Dome. The Valley's menu was still in the works, a beer garden was unfinished and taxidermy still needed to be secured.

"My business partner and head brewer, Travis Guterson, and I have a huge respect for what Justin and Robby created on Hilltop Tacoma," says Runion. "The way they run their business is similar to how we like to do things. They're detail-oriented, but it's super relaxed with amazing service. And the food is absolutely on point, which can surprise people who judge the joint as divey."

The truck, dubbed The Galley, extends 7 Seas' nautical theme. WrapJax wrapped the giant truck to resemble a wooden pirate ship, including portholes.

The truck will be parked in the huge parking lot in front of the 7 Seas brewery, serving lunch and nighttime meals, beginning Tuesday, Nov. 4. The truck will operate 11 a.m. to 2 p.m. and 4-9 p.m. Tuesday-Sunday. Chef Roger Weatherhead is in command of the vessel.

"The menu will be different than Eleven Eleven or The Valley," says Peterson. "I knew instantly who should run the truck's kitchen. I've known Roger Weatherhead since he was helping us in the kitchen at the old Hotel Bar & Grill. He's seasoned in food trucks."

"I actually met Robby Peterson while working at the Spaghetti Factory, before the Hotel Bar & Grill," says Weatherhead, who grew up in Tumwater, and subscribes to the Peterson brother's bearded way of life.

After the Hotel Bar & Grill, which was owned by The Swiss partnership in the early 2000s, Weatherhead worked in several SeaTac hotel kitchens, Point Defiance Zoo's catering program, and eventually followed a friend to the Flair Taco truck in Seattle's Fremont neighborhood.

"The taco truck was hard work. The hours were strenuous, but it was fun," says Weatherhead. "Feeding drunk people at the end of the night was crazy fun."

Weatherhead got tired of the drunks, and eventually was hired on with Where Ya At Matt, Matthew Lewis' popular Seattle Cajun food truck.

"Last year when I was working for them, Eater named it the number nine truck in the country," says Weatherhead. "They did numbers I didn't know you could do on a food truck. They had a good system set up. And they had a menu where people didn't just want to order one thing. Some people ordered a sandwich, side and dessert. I learned a lot from them."

Weatherhead also worked for the famous Skillet truck, as well as ran Seattle's The Grilled Cheese Experience truck for a summer while the owner tended to his new baby.

"Then, I walked into Eleven Eleven this summer and next thing I know ... I'm running the kitchen in The Galley," says Weatherhead.

A wooden ship-inspired behemoth first draws you in, but Weatherhead plans to have you as an anchor customer with his gourmet take on classics. During the day, expect sandwiches, soups and salads "with twists," Weatherhead says.

"If all goes as planned, I will serve a housemade lamb chorizowith sofrito de tomato and shaved Manchego. It's simple. A classic play on the meatball sub," he says.

He wants to serve a crispy pork belly BLT with heirloom tomatoes and butter lettuce. He wants to hand customers a Caesar with butter lettuce, housemade dressing, crouton and marinated white anchovies called boquerones. "Romaine has taken iceberg's place," he laughs.

"At Skillet, I would make myself a sandwich with just boquerones," he says. "I probably had the worst breath, but I didn't care. They are so delicious."

"We want a steady lunch menu that people could depend on," says Runion. "The Peterson Brothers and Roger are sandwich experts, so we'll have three to five sandwiches, some soup and a couple salads."

For the first couple of weeks, the lunch menu will also be featured during the night session, with the possibility of an additional menu item or two.

Eventually, the night session could feature an entirely new menu.

"We want to add tacos or Mexican-inspired dishes for a couple nights. Then, another couple nights cook up bratwursts and sausages. We don't want to be pigeon-holed in one type of cuisine," says Runion. "We'll also have a nightly badass charcuterie plate with local cheese, local salamis and other items. Beer, sausage, cheese and bread - I could live on that."

Weatherhead will ease into the nightly specials, adding shareable bar snacks such as pretzels with beer mustard, the charcuterie plate Runion has in mind, mussels with beer and candied bacon. He's also eager to cook with 7 Seas beers.

Mac and Cheese Madness: Lunchbox Laboratory

I enjoy beer.

Beer makes mac and cheese awesome.

By the transitive property (math isn't my strong suit), I think beer mac and cheese is delicious.

Beer and cheddar have such an affinity for one another - the sour punch of the beer plays gorgeously with the nutty tang of the cheddar, particularly the sharp variety. The combination of the two invokes the umami must-not-stop-eating-this-deliciousness effect, which is reason enough for me to search out a beer mac and cheese dish.

I found one.

Lunchbox Laboratory has hooked up with fellow Gig Harbor resident 7 Seas Brewing for two weeks of experiments. The white lab coats in Lunchbox's kitchen have created dishes from 7 Seas' brews, including a British Pale Mac N Cheese ($6). The secret to the mac and cheese is beer - specifically, 7 Seas British Pale Ale. That ale gets poured into Lunchbox's house cheese sauce - American and sharp cheddar - mixed on the stovetop with fisarmoniche past then topped with optional bacon, jalapenos, green chilies and pork rinds. I suggest bacon. For an extra dollar, the top of the mac and cheese basically becomes very brown.

Beer and cheese are a match made in heaven, and at Lunchbox Laboratory, 7 Seas adds depth to the creamy bowl of goodness.

Tacoma Art Museum collaborates with Harmon Brewing and Heritage Distilling

Art + beer + bourbon = Tacoma Art Museum

As we mentioned earlier this week in our weekly series on the opening of the new Tacoma Art Museum wing, the museum has teamed with local beer mavens Harmon Brewing Company to create signature beers for exhibitions over the past five years. For the grand opening of the new Haub Family Galleries, Harmon and TAM have come up with a new brew called Tacoma New West Cascadian Dark Ale. The museum has also collaborated with Heritage Distilling Company to craft a rich, flavorful, deep golden Tacoma New West Bourbon. The ale will be sold at TAM Cafe and all of Harmon's restaurants; both the ale and the bourbon will be available at TAM's Go West Gala and Go West Grand Opening evening social events.

Tacoma, WA -Tacoma Art Museum (TAM) is celebrating the largest gift in the museum's 79 year history with a limited edition spirit and a signature ale. Flavor - a night of international dining to benefit Tacoma Community House

Try authentic Salvadorean food at El Pulgarcito in Lakewood.

Stanley & Seafort's, Pacific Grill, C.I. Shenanigan's, The Lobster Shop - or maybe even The Pine Cone Cafe - you've already got your favorite Pierce County dining out spots. Maybe it's close to your house, and maybe it says something about who you are. Or, maybe you prefer to stay away from obscene sausages, lutefisk dinners, balut eggs, pig uterus in tom yum soup and scary fish faces.

The good folks at Tacoma Community House are well aware of Pierce County's melting pot. TCH provides programs and services to immigrants, refugees and others to help strengthen their lives and help them become a part of the community.

Of course, TCH's efforts take money.

Flavor, a night of dining at immigrant-owned and immigrant-supporting restaurants has reached its second birthday Thursday, Oct. 23 with participating restaurants kicking back 25 percent of food sales to TCH. Participating restaurants include Adriatic Grill, Aviateur French Diner, Doyle's Public House, El Pulgarcito, Gateway to India, Il Lucano Ristorante, Indochine, Karma Fine Indian Cuisine, Pho King, Southern Kitchen and others. This year's participating restaurants have a more international presence than last year, although Flavor still leaves out the flavors from Tacoma's Lincoln District and Lakewood's International District.

Tacoma Community House has become like a coach for food introverts, inviting you to embrace the unusual, the special and the unfamiliar in Pierce County's food scene. In other words, kiss the damn scary fish face.

Mark Oct. 23 on your calendar as the night you stand up for immigrants while sitting down for an adventurous meal.

Lunchbox Laboratory to perform experiments on 7 Seas Brewing

Lunchbox Laboratory has received favorable press from Evening Magazine, Food Network, Bon Appétit and Food and Wine Magazine. A year ago this month, a new round of Laboratory press hit the South Sound when the gourmet burger joint opened a third location in Gig Harbor (4901 Point Fosdick Dr. NW). The fancy Uptown Shopping District welcomed traditional patty and bun faves with twists, handspun shakes and funky cocktails.
