JBLM military couple opens Lacey, wa., restaurant

Bringing comfort food to the community

Steve Cobb has spent a large chunk of his 25 years in the food service industry cooking and serving up hearty food to military members all over the world.

Cobb worked in different dining facilities at military installations in Europe and the U.S. while his wife, Katrina, a master sergeant, served in the Army.

Although those days of working in military dining facilities are now behind him, Steve is still serving up hearty food to Servicemembers.

But this time it's with a more personal touch.

The Cobbs recently opened Mac N' More, located at 9323 Martin Way in Lacey.

"It's something he's always talked about," said Katrina, who serves with the 201st Battlefield Surveillance Battalion and has been married to Steve for nearly 28 years. "For me, it's kind of like he's supported me throughout my military career so now it's time for me to support his dream."

The restaurant, a casual place that serves comfort foods to eat in or to take home, is something Steve put a lot of research into before jumping into the often-risky restaurant business. In homage to its name, the main dish at the restaurant is macaroni and cheese, but the menu has a host of heartier fare, including meatloaf, chili mac, patty melts and a wide variety of chicken dishes.

"It's comfort food with a twist," Steve said. "I talked to a lot of people in the area and really asked the question, ‘What does this town really need?' And this is niche nobody else is doing."

While the other fare on the menu is strong, the macaroni and cheese is the specialty. Steve takes great pride in the recipe.

"It's a miracle cheese sauce," he said proudly. "Mine is very intense ... it's very creamy and very cheesy."

Customers can also add their own ingredients to the mac and cheese, and each order is topped with corn flake crumb cheese crust.

In addition to cooking up quality food ("The food is fit for foodies," he said), Steve has made an effort kept prices low while making sure customers don't have to wait long to dig in.

"Everything on the menu I can do in five minutes," he said.

Everything on the menu has also gone through a rigorous set of taste tests from some of America's toughest critics: Soldiers.

In the weeks leading up to the opening of the restaurant, Steve made some of everything on the menu once a week for Katrina to bring into the office and her Soldiers.

"If it didn't pass the test, it didn't make it on the menu," Katrina said. "If Soldiers eat it, it's a good recipe. If they come back for more, it's a really good recipe."

The Cobbs are confident that same edict will ring true with the rest of the South Sound.
